Red Velvet White Chocolate Chip Cookies


Since I was off today and decided to make it a bake day, I asked one of my friend what she wanted, she said "Something Red Velvet" I had seen these on Pinterest and gotten the recipe from here, so I told her "I've got the perfect thing."
These I tasted the minute they came out of the oven. SO GOOD. I'm not the biggest red velvet fan, but I know my mom is gonna DIE for these.

2 1/4 cups all-purpose flour
2 1/2 tbsp cocoa powder
1 1/2 tsp cornstarch 
3/4 tsp baking soda
1/2 tsp salt
7 tbsp butter, room-temperature
1 1/2 cups sugar
6 tbsp vegetable shortening
1 large egg
1 large egg yolk
1 1/2 tsp white vinegar
1 1/2 tsp vanilla extract
1 tbsp red food coloring
1 1/3 cups white chocolate chips, sorted

Preheat oven to 350 degrees.
Whisk flour, cocoa, cornstarch, baking soda, and salt. Add Butter, shortening, and sugar to the bowl, mix on med speed for about four minutes. (It's moist like brown sugar at this point.) Add egg and egg yolk and mix until combined. Add vanilla and food coloring (I should have used a bit more, I used the Wilton food color gel stuff and mine looked super red in the dough but kind of brown when they came out.) Mix. Add 1/2 the white chips, (I used them all and didn't press any into the cookies, I'm a little lazy) Scoop dough by the tablespoon, roll into balls, and place on a buttered sheet (I used parchment paper) Press 6 chips into balls, but do not flatten.
Bake for 8-10 minutes


Like I said, super yummy. I could eat them all day. I think I might leave these for Santa, either these of those Stout Cupcakes.

Chocolate Stout Cupcakes


DON DON DON DON!
It's the CUPCAKE FOR MEN! I personally haven't tried these, but everyone that has said that they're super yummy. I got the recipe online here, David said he prefers to use Guinness which is what I used because that's what my boyfriend drinks.
3/4 cup unsweetened cocoa
2 cups sugar
2 cups all-purpose flour
1 tsp baking soda
a pinch of salt
1 bottle stout beer (I used Guinness Black Lager)
1 stick melted butter
1 tbsp vanilla extract
3 large eggs
3/4 cups sour cream
1 package cream cheese, room temperature
3/4 - 1 cup heavy cream (I used 1 cup)
1 pound confectioners sugar

Preheat oven to 350 degrees
Wisk cocoa, sugar, flour, baking soda, and salt. In another bowl combine beer, melted butter, and vanilla. Beat in eggs one at a time. Mix in sour cream until thoroughly smooth. Slowly mix the dry into the wet. Bake for 12 minutes and then rotate the cupcakes, bake for another 12 minutes.
Beat the cream cheese (until super smooth or you'll regret it later. NO CHUNKS) Add the heavy cream, and then slowly add the sugar, )you might use more that 1 pound, if you want it to be kind of thick. Mine was super gooey, and I got it everywhere but it was fun.) Refrigerate until used.
In his he said to use more of the unsweetened cocoa to sprinkle on the cupcakes, but my friend Kerry wanted to get festive and use the green sprinkles. She turned my manly-man cupcakes into girly-man cupcakes.
Fun to make, fun to eat. The alcohol bakes out, I think, so you won't get plastered if you eat them all but they do smell like beer the entire time they're in the oven.
